My Baharat spice has been used in braised chicken dishes and braised beef, but not braised lamb. This recipe was both traditional and oven-baked when I first created it. Both methods were delicious. Both are delicious! They would probably use whole, chopped-up chicken pieces in Iraq as they don't have Cornish hens. Cornish Hens are my favorite choice for this dish. It adds a visual impact to the table. It doesn't taste any different from meat.
When buying Cornish hens, allow one whole bird per person; 2 pieces of whole chicken per person. Most people will only eat half of a Cornish hen if they are served with two sides. Some Cornish hens are small, but some can be quite large. I've seen men eat whole Cornish chickens. If I am served with only salad, I find it difficult to eat the whole bird. Half a Cornish hen is enough to fill me up if I have 2 sides. This recipe can be used for Paleo, Atkins, Keto, Primal, and Paleo diets.
INGREDIENTS:
2 Cornish game hens weighing 1-1/4 pound
4 T. unsalted butter (use more if you have to reduce calories).
1 tsp. my homemade Baharat Spice Blend
1/2 tsp. Aleppo pepper (or dried ancho chili pepper)
1/4 tsp. 1/4 tsp. onion powder
Optional: 1/2 tsp. Sumac (if possible)
DIRECTIONS Heat oven to 350o In a microwave-safe bowl, melt the butter. Mix in the spices. Use a knife or kitchen shears to cut the backbone of the hens. This is called spatchcocking, or butterflying the bird. Prepare the fire for grilling. Once the fire is ready, spread the pieces (or butterflied Cornish Hens cut-side down) evenly. To catch the juices, I bake them.
Use a brush to coat the hens with the spice-butter mixture. Bake for 45 minutes in a 350o oven. Grilling: Cook (turning once halfway through) until internal temperature reaches 165o. To brown the skin, turn up the oven to 375o. As ovens vary, be sure to watch them carefully during the last 15 minutes. The meat is done when a meat thermometer is inserted into the middle of the breast meat reads 165o. Take 1 Cornish Hen out of the oven or grill. Half a Cornish Hen will be served to each male guest. My house usually has the remaining halves of the birds from women.
This meat is traditionally grilled. It is best to grill it first, as it is so memorable! You can also bake it in the oven to see the difference. You can pair this meat with any side dish you choose. It's best served with spinach and kale sautée and my Iranian Mint Cucumber salad.
